Puri is one of the authentic breakfast in all part of India. This is all time favorite of kids and adults too.Soft and crispy puri is usually made with Atta (wheat flour), salt ,semolina, oil etc which is mixed well and rolled then deep fried in oil to a soft puffy and crispy bread (puri).Nowadays people used to have it as dinner too.
Bhaji is the best combination to this soft and crispy Puri. Bhaji is a blend of potatoes and carrots with limited spices with a very tasty thick gravy .Kids will really love this bhaji with puri as it is not very spicy like other Indian curries.

There are many different styles to make Puri and bhaji but i m showing you quick and easy method to prepare both in these busy lifestyle. This recipe will definitely help those who is lacking time for cooking, without leaving the authentic taste and flavour. I am sharing the recipe with limited ingredients available at home, one of the specialty is it’s an onion free bhaji.

 I have originally created another evening snack recipe with potato and rice flour, which will be a favorite snack to our kids. Please find the recipe on highlighted area.

INGREDIENTS FOR SOFT AND CRISPY PURI

Atta (wheat flour)

2 Cups

Semolina (rava)

2 Tablespoon

Baking Soda

a pinch

Yoghurt (curd)

2 Tablespoon

Salt

As required

Oil

for deep frying (approx. 1½ cup)

1. In a bowl add Atta, semolina, baking soda, yoghurt and salt. Mix well to combine all the ingredients well






2. Now add water as required and knead well to make a soft dough.

3. Add some oil and  Knead again

4. Close using a plate and keep aside for 15 minutes. Remove the lid and knead again.

5. Make small to medium size balls .

6. Dust some flour on roti roller board and roll each dough balls to a circle shape using roti roller .(you can try this using chappathi presser too)

7. Heat a kadai and add enough oil to deep fry the puris. Once the oil is hot enough add one puri

8. Give a gentle press using ladle or spoon ,this help to puff up the puri

9. Once the puri puffs up and turns to golden brown flip the other side

10.Remove and drain the excess oil keep in to tissue paper or plate.

11.Serve with potato bhaji and enjoy the dish

INGREDIENTS FOR BHAJI


Potatoes

3 medium size

Carrot

½ of a carrot

Green chilly

1 no

Ginger

Small piece

Garlic

5 to 6 cloves

Curry leaves

few

Coriander leaves

a handful

Mustard seed

½ spoon

Fennel seed

1 spoon

Dry chilly

2 nos

Turmeric powder

½ spoon

Salt

as required

Oil

2 tablespoon


1. Cook the potatoes with some salt in a cooker. smash the potatoes and chop carrots, green chilly, ginger, garlic, Coriander leaves.




2. Heat a kadai add 2 tablespoon of oil


3. Add mustard seed, fennel seed, Chopped garlic , greenchilli,curry leaves , dry chilly and saute well


4. Add carrots and saute well

5 .Add turmeric powder and saute well

6. Add 1 glass of water.

7.once it starts to boil add smashed potatoes.

8. mix well and add salt as required

9. Let it cook for a while in medium flame to get a thick gravy 

10. Bhaji is ready , add some coriander leaves to garnish


10. Now, Bhaji is ready to serve..
