Puri is one of the authentic breakfast in all part of India. This is all time favorite of kids and adults too.Soft and crispy puri is usually made with Atta (wheat flour), salt ,semolina, oil etc which is mixed well and rolled then deep fried in oil to a soft puffy and crispy bread (puri).Nowadays people used to have it as dinner too.
Bhaji is the best combination to
this soft and crispy Puri. Bhaji is a blend of potatoes and carrots with limited
spices with a very tasty thick gravy .Kids will really love this bhaji with
puri as it is not very spicy like other Indian curries.

INGREDIENTS FOR SOFT AND CRISPY PURI
Atta (wheat flour) |
2 Cups |
Semolina (rava) |
2 Tablespoon |
Baking Soda |
a pinch |
Yoghurt (curd) |
2 Tablespoon |
Salt |
As required |
Oil |
for deep frying (approx. 1½ cup) |
9. Once the puri puffs up and turns to golden brown flip the other side

INGREDIENTS FOR BHAJI
Potatoes | 3 medium size |
Carrot | ½ of a carrot |
Green chilly | 1 no |
Ginger | Small piece |
Garlic | 5 to 6 cloves |
Curry leaves | few |
Coriander leaves | a handful |
Mustard seed | ½ spoon |
Fennel seed | 1 spoon |
Dry chilly | 2 nos |
Turmeric powder | ½ spoon |
Salt | as required |
Oil | 2 tablespoon |
1. Cook the potatoes with some salt in a cooker. smash the potatoes and chop carrots, green chilly, ginger, garlic, Coriander leaves.
2. Heat a kadai add 2 tablespoon of oil
3. Add mustard seed, fennel seed, Chopped garlic , greenchilli,curry leaves , dry chilly and saute well
4. Add carrots and saute well
5 .Add turmeric powder and saute well
6. Add 1 glass of water.
7.once it starts to boil add smashed potatoes.
8. mix well and add salt as required
9. Let it cook for a while in medium flame to get a thick gravy
10. Bhaji is ready , add some coriander leaves to garnish
10. Now, Bhaji is ready to serve..
