പഴുത്ത മാങ്ങാ കൊണ്ടൊരു അടിപൊളി കേക്ക് 🥭 /The real Mango punch cake🥭




Ingredients for cake

All purpose flour       1cup

Corn flour                 1 1/2 table spoon

Baking powder         1/2 tablespoon

Egg         3 nos

Butter    100 gm

Powdered sugar 3/4 cup

Sieve all purpose flour, baking powder and cornflour. Mix sugar and butter in a bowl using spoon or whisk, add eggs to it and beat using a electric beater or whisk. Now add the flour mix in batches and mix well. Pour the batter to cake tin ( grease the tin with some butter,  place a butter paper and pour some sprinkle some all purpose flour). Pre-heat the oven for 15 mins @170 degree on bake mode. Bake it in the pre-heated oven for 35-40 mins.

Sugar syrup recipe

Sugar      1/2 cup

Water      1 cup

Mango sliced (here i am using 2 mangoes for the cake. 1 1/2 cake for soaking in sugar syrup and 1/2 mango for making ganache. )

Add sugar and water to a pan and boil it , once the sugar is dissolved, switch off the flame and add the sliced mangoes with seed.. it helps to get the mango flavour to the sugar syrup. Once it cooled separate the mangoes and syrup. These mangoes will be used for   filling the cake.

 
Mango Ganache recipe

Mango   1/2 sliced

Sugar      2 table spoon

Milk powder  1 1/2 table spoon

Whipping cream 1/4 cup

Melted butter 2 spoon

Grind all in a mixie jar to a smooth paste. Pour this mix to a pan and stir well, do this process in medium flame.Once it starts to melt add butter and stir well.while it gets to syrup consistency switch off the flame and keep it for cooling.

Note: If the ganache gets thick add 2 or 3 spoons of warm water or milk and mix well.

 

Whipping cream

Whipping cream   1 cup

Sugar powdered   1/2 cup or  according to your taste less or more.

Add whipping cream and sugar to a bowl and beat using a electric beater.Beat until you get the required thickness.

 

Once the cake is cooled cut in to layer apply the sugar syrup frost and place the mangoes,  frost again a layer over the mango, place the other layer and cover it with the whipping cream, pour the ganache over the cake and decorate according to your likes.
